This Gamay is produced in the Comté Tolosan, a wine-growing region in the South West of France that stretches from the Pyrenean foothills to the edge of the Massif Central.
The grapes are harvested early (in early September), at full ripeness. From there, they are sorted carefully to remove plant matter and imperfect grapes. The vatting period is short (5 to 7 days) at 25° so that the colour and aroma of the grapes can be extracted without adding too many tannins.
It emerges as a brilliant ruby wine. It is characterized by an intense nose of red fruits (cherry, strawberry, raspberry, redcurrant) and hints of rose, violet, and peony. Lively on the attack, its tannins are supple and balanced. It has a mild, smooth mouthfeel.
